Getting it done:
Put oil in a pan and let it heat up. Once the oil is hot, add mustard seeds, cumin seeds, curry leaves and green chillies. Let them splutter and add chopped onions and ginger. Let them cook until the onions are golden brown.
When the onions are golden brown add all the dry spices. Cook with the lid on for 2-3 minutes. Once the spices are cooked, add boiled and mashed potatoes. Mix them well and get the tarka and potatoes combined well.
Now add 1 tablespoon of water and cook with the lid on for 5-6 minutes with the lid on.
Once the water starts to evaporate, garnish with chopped coriander leaves. And that's all, your perfect and delicious Aloo Di Sabji is ready to be served with puri or roti.
