Getting it done:
Method For the stuffing add Cumin seeds, mustard seeds, ajwain and curry leaves to hot oil. Once the seeds start popping add the onion and let it cook until transparent.
Now add all your dry spices and cook for a couple of minutes. Once the spices are cooked add the mashed potatoes and cook for another 3-5 minutes and the stuffing is ready.
Now make small dough balls and roll them out into a parantha. Use butter to make your dough pockets. In a blender add garlic, ginger, green chillies, coriander leaves, mint, salt, lemon juice and dahi and blend everything together to make your chutney.
For the salad topping, mix onions, tomatoes, green chillies, aloo bhujia, salt and pomegranate seeds and combine it all.
Now that all the components are ready we'll start assembling the kulcha. Line your Kulcha with ketchup and the green chutney. Now we'll add in our stuffing and top it with the salad mix. Close the kulcha and toast it with butter on a lava. get ready to make a lot of those as they're gonna fly off your dining table.
