Getting it done:
Put all the dry spices together in a little bowl and mix them together. Add a Tbs of Mustard oil in the dry spice mix and combine it well.
Now wash your karele and peel them, once they are all peeled make slits in them down the middle. Stuff these slits with the spice mix and set aside for 1-2 hours.
Now we'll heat up 5 Tbs of mustard oil and let that smoke up. Once its all smoked out turn the het on medium and add the karele. Fry them until they lose the green colour. Once they turn charred brown, take them out in a bowl.
In the same pan, add 2 roughly sliced onions and cook until transparent. Once they are transparent, add Achaar masala from any of your favourite achaars and combine that.
When the onions start to turn slightly brown add the karele and mix. Cook them for a couple of minutes and they are ready to be served along with roti and raita.
